
Bruschetta Chicken Sliders

Sometimes in the kitchen it’s nice to not do every single thing yourself. So although it’s commendable to create your own bruschetta ground chicken, in this recipe we’re going for super quick dinner with minimal effort. Serve with your favorite side. The other night we also preambled it all with a spinach dip bread bowl. We were happy campers. Fat ones.
Helpful tip for Florida folks – watch the Publix ads since the Mighty Spark brand ground meats go BOGO with some frequency. (I am not being compensated by anyone for mentioning that.)

Bruschetta Chicken Sliders

Ingredients
- 1 lb Bruschetta Ground Chicken (Mighty Spark is one brand…)
- 6 slider buns (brioche is yummy)
- 1 ripe tomato
- 1 large handful fresh arugula
- 6 slices cheddar/muenster mixed cheese (or whatever you've got!)
- ketchup (I like the organic ketchup for color & richer flavor)
- 1 TSP olive oil
Instructions
- heat olive oil in a large frying pan over medium heat
- Form ground chicken into 6 sliders. Make them slightly larger than your buns.
- Cook sliders over medium heat in prepared pan for about 4-5 minutes til browned on bottom.
- flip and cook for one minute.
- Top each slider with a slice of cheese and cook until done (another minute or two)
- Place cheesy sliders on bun and top with ketchup, then add tomato and a few arugula leaves.
Notes
Feeds two hungry people. A small family could be satisfied by adding extra sides, and perhaps making the sliders smaller (adjust cooking time – all chicken dishes need to reach internal temperature of 165 F).
