Kendo’s Chicken Scramble for One!

I spend a good percentage of the day alone. I also spent the majority of my life as a single man so I know what it’s like to try and keep yourself fed. What do you do when you’re starving, there are no edible leftovers in the fridge and you don’t want to just eat goodies (well, you do but…). Well of course you grab a frozen burrito.

Well, today we are fresh out of frozen burritos. I had some leftover shredded chicken that needed to get eaten, so I assembled the following scramble. It’s not a very photogenic dish, but that’s what God made Italian parsley for! Clean up was a snap and it kept me full for a good while. Tasty, too! Adjust the white pepper to your liking. (I used 1/2 tsp…)

Ingredients
  

  • 2 large eggs
  • 1/4 tsp white pepper (black will do)
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1 TBSP unsalted butter
  • 1/3 cup sweet onion diced
  • 1/3 cup red or yellow bell pepper diced
  • freshly ground salt & pepper to taste
  • 1/4 cooked shredded chicken
  • 1/3 cup colby jack cheese shredded
  • fresh chopped parsley for garnish

Instructions
 

  • Beat eggs slightly. Whisk in white pepper, oregano and garlic powder.
  • Heat butter in a small to medium frying pan over medium heat (I use 4).
  • .Add pepper & onions and saute until vegetables are soft (about 4 minutes).
  • Add salt & pepper to taste.
  • Add shredded chicken. Saute and stir for 1 minute so chicken absorbs some of the butter.
  • Stir in the cheese and cook 1 more minute.
  • Add egg mixture. Let set slightly and then scramble until eggs are cooked.
  • Remove from heat, serve and garnish with chopped fresh parsley if desired!
