Almost a one pot meal – cook your brown rice separately, because… it’s brown rice – and for some people, it’s unpredictable. (Raising my hand.) We use a small rice cooker.
Pretend I’m holding a chihuahua, and read the next paragraph in your mind with the voice of Elle Woods. Then it won’t feel like I’m always telling you what to do.
The point of this meal , other than stuffing your mouth with sausage, is to be a cheap meal. Buy your smoked sausages when they are BOGO and freeze one for later. Fresh green beans are cheap and you’ll get more than one meal from the bag this time. Frozen broccoli – same deal. Use tomato sauce leftover from Sunday, the half onion you saved last night, and you finally have a reason to use that 3rd bell pepper from the 3-pack. You know, the green one that no one likes. Well at least Martha Stewart doesn’t like it, and I’m with her. Buy the cheese in a one pound block, shred half for this meal and have the other half tomorrow for lunch with some wheat crackers and olives. 1lbsmoked turkey sausagecut diagonally into 1/4 slices
1TBSPextra virgin olive oil
1/2large red or yellow onionchopped
1medium green bell pepperseeded and chopped
1large handfulfresh green beanstrimmed and cut in half
2cupsfrozen broccoli floretsdefrosted
1tspminced garlic (jarred is fine)
1cupsharp or extra sharp cheddar cheese
1 1/2cupscooked brown rice*
*1cupleftover chicken brothfor some of the rice liquid (optional)
Get brown rice going. Cook at least one cup according to directions (freeze leftovers). Better yet – use a rice cooker (a bit quicker). Make sure you use the little ‘cup’ and the line measurements inside the cooker (2 cups brown rice, go to the ‘3’ line with water…).
Measure out 2 cups frozen broccoli and let defrost while you chop up veggies and sausage, and grate cheese.
In a large skillet (with lid) – heat pan on medium and add olive oil and butter. Melt and cook 30-60 seconds.
Add sausage slices, onions, green beans and bell pepper. Cook for 5 minutes, let everyone get a little brown, stirring occasionally.
Add broccoli, tomato sauce and seasonings. Stir, put the lid on, lower heat and cook for 5 minutes.
Add in the rice. Stir and re-cover. Cook for 1-2 minutes.
Remove lid, stir in the cheese and then remove from heat. That’s it!
Start stuffing that sausage in. Adjust breathing and mouth position accordingly.
