Not the healthiest way to eat your green beans, but other than the hallowed casserole, the most delicious.

Reasons to love this recipe – once you’ve read this a few times, you don’t need measurements or a printout (although they are included for the trepidatious. Trust me – I totally get it.)

Other than cooking bacon and trimming green beans – this is a no-brainer recipe that takes little effort or attention.

  • Cook up 3-4 slices of bacon. Drain in paper towels…
  • Get a lb bag of fresh green beans, wash them, trim them.
  • In a medium saucepan with a lid, cover them with low-sodium broth or stock (chicken or veggie work well).
  • Chop up the now cooled bacon and add to pan.
  • Add a dash of red pepper flakes.
  • Cover, bring to a boil. Reduce heat and simmer until they are your kind of done (I like ’em soft – about 20-25 minutes; and the longer you simmer the more bacon flavor).
  • Crack some pepper o’er dem sombitches and toss in some chopped green onions if you like ’em.

Ingredients
  

  • 3-4 slices bacon
  • 1 lb fresh green beans
  • 2 cups vegetable/chicken broth or stock
  • 1/8 tsp red pepper flakes (or more to taste)
  • fresh ground black or white pepper (to taste)
  • 1-2 green onions chopped (optional)

Instructions
 

  • Fry up the bacon until just brown. Drain bacon in a plate lined with paper towels.
  • While bacon is frying, wash, trim and halve your green beans. Place in a medium saucepan with a lid.
  • Place pan on stove and pour over the broth or stock to cover the beans. If you need more liquid you could just add a few tablespoons of cold fresh water.
  • Heat pan over medium high heat.
  • Halve the bacon slices and then chop them into 1/2" pieces. Add to the beans.
  • Throw in your dash of red pepper flakes. Stir.
  • Cover pan and bring to a boil. Lower heat to simmer and cook for 20-30 minutes (desired tenderness). If you like 'em firmer cook for about 10-12 minutes, but there will be a little less flavor. Add green onions the last minute or two if using.
  • When done grind some fresh black pepper, stir and serve!
